All you’ll need is one bowl, and a few ingredients to whip up this sweet treat. These maple funfetti blondies are unbelievably good. It’s chewy, moist, and the perfect bite-sized summer treat!

ONE BOWL LOVIN!

Sometimes the best desserts come from one bowl and an unlikely pairing. This recipe came from wanting a maple cake and a vanilla funfetti cake in one. Instead of working for hours in the kitchen and getting into a fuss with buttercream, these blondies were born! To make these as delicious and quick as possible, you’ll only need one large bowl. Toss all your ingredients into the bowl, mix, and pour into a pan. We baked them in a square 8×8 pan (lined with parchment paper of course), but you can use a 9×9 pan too! Even though these blondies are so desirable, let these cool in the pan for 10 minutes before cutting into them. Once they settle, we promise you’ll have the best tasting blondie bars that you could’ve ever imagined! (top off with more cookie butter if you’d like!

KEY INGREDIENTS

Eggs: The base structure of these blondies are eggs! For a non dairy alternative, sub flax eggs, applesauce, or use Bob’s Red Mill Egg Replacer.

Coconut Oil: There aren’t a lot of blondie recipes with an oil-base (seems like butter gets all the shine!), however when you run out of butter–coconut oil works perfectly! Coconut oil contributes to the chewy, soft texture of these blondies.

Sunflower Butter: The sunflower butter contributes to the texture and flavors of these blondies. Our friends over at 88Acres sent us the best Vanilla Cinnamon Sunflower Butter a while back for our Chocolate Chip Cookie Blondies. It was so good, we decided to use it for these blondies! This sunflower butter is vegan, gluten free, and kosher. You can substitute any sunflower butter, or nut butter for this recipe! 

Brown Sugar: Our main ingredient in these blondies! This adds a robust and boost of flavor into this treat.

Funfetti Sprinkles: Our favorite part of this recipe! Baking with funfetti is…..FUN! There are so many types of sprinkles, and they all come in different color schemes and shapes. We got our Rainbow Sprinkles from Target. Using a combination of all colors in the rainbow brings out the best, visually pleasing treats!

Additional Toppings: Vanilla glaze! Combine 2 tbsp powedered sugar with 1 tsp of almond milk to top these off.

Ingredients

  • 1 1/2 cup all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter melted
  • 1/2 cup sunflower butter
  • 2 eggs
  • 1/2 cup maple syrup
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 2 tsp vanilla
  • 1/2 cup funfetti sprinkles

Instructions

  • In a large bowl, combine the melted butter, sunflower butter, maple syrup, eggs, and vanilla together.
  • Add in the white & brown sugars, flour, baking powder, and salt.
  • Fold in the funfetti sprinkles.
  • Line a 8×8 baking pan with parchment paper. Pour the batter into the pan.
  • Bake the blondies at 350 degrees F for 25 minutes
  • Let the blondies cool in the pan for 10-15 minutes before removing & cutting.
