Rainbow Chip Cookie S’mores
These Rainbow Chip Cookie S'mores are a great twist on your favorite cookie. Super easy and under 30 minutes.
Servings: 8 cookies
Ingredients
- 1 Box Meli’s Rainbow Chip Cookie Mix
- 1 Egg
- 1 cup peanut butter
- 4 tbsp ½ stick unsalted butter, softened
- 4 large marshmallows
Instructions
- Preheat the oven to 350 degrees F
- In a large bowl combine the egg, softened butter, and peanut butter (even though the box says to use ½ cup, we added more peanut butter to make the dough tacky enough to stick!). Once everything is blended, add in the Meli’s Rainbow Chip Cookie Mix.
- Scoop 2 tbsps worth of cookie dough, and roll the dough into a ball. Flatten out the cookie dough with your hands.
- Cut your marshmallows into halves. Place ½ the marshmallow on the flat cookie dough. Cover the sides of the marshmallow with more dough. Seal the dough around the edges.
- Place the cookies 2-3 inches apart.
- Bake for 10-12 minutes. Let the cookies cool for 5-10 minutes. Then enjoy!
