Preheat the oven to 350 degrees F

In a large bowl combine the egg, softened butter, and peanut butter (even though the box says to use ½ cup, we added more peanut butter to make the dough tacky enough to stick!). Once everything is blended, add in the Meli's Rainbow Chip Cookie Mix.

Scoop 2 tbsps worth of cookie dough, and roll the dough into a ball. Flatten out the cookie dough with your hands.

Cut your marshmallows into halves. Place ½ the marshmallow on the flat cookie dough. Cover the sides of the marshmallow with more dough. Seal the dough around the edges.

Place the cookies 2-3 inches apart.

Bake for 10-12 minutes. Let the cookies cool for 5-10 minutes. Then enjoy!
