Servings: 2 people
- 2 cups cold, day-old white rice
- 1 small white onion diced
- 1 1/2 cups broccoli
- 1/2 cup carrots diced
- 2 tsp sesame oil
- 4 tbsp soy sauce
- 1/2 tsp garlic minced
- 1 egg
- 1/2 tsp black pepper
- 1/2 tsp salt
- 3 tbsp Trader Joe's Soyaki Sauce
- 4 oz Tilapia
Heat 1 tbsp of oil in a large skillet or wok over medium heat.
Season tilapia lightly with salt and pepper. Cook the fish for about 3–4 minutes on each side. Pour in the Trader Joe's Soyaki Sauce and gently coat the fish with the sauce.
Remove from pan and set aside.
Add 1 tbsp of sesame oil in the same pan. Add diced onion, carrots, and broccoli. Sauté over medium-high heat for 4–5 minutes, until softened.
Stir in the minced garlic and cook for another 30 seconds.
Add the cold, day-old rice to the pan with the veggies along with the soy sauce (you can add 1-2 tbsp of Soyaki sauce for extra flavor).
Push the rice to the side and crack in the egg. Scramble until just cooked. Mix the egg in with the rice.
Add salt and black to taste.
Dish the rice out and top off with cooked tilapia.
