If you aren’t from Texas, the term Tex-Mex probably sounds foreign to you. As Texas is right above Mexico, they’ve blended elements of both Texan and Mexican foods. Tex Mex dishes and ingredients are fajitas, burritos, queso (tex-mex is cheese-heavy), ground beef in most dishes, and flour tortillas vs corn tortillas. This recipe is a classic ode to true Tex-Mex culture. The perfect burrito bowl – no tortilla, just the ingredients. Recipe Tips
Vegan Ground Beef: Vegan beef is super easy to purchase at any nearby grocery store. Gardien, Beyond Meat, Good and Gather, and Impossible Foods all have great options. Or if you aren’t vegan, ground beef works perfect! Pescatarian? Toss in cooked shrimp as a protein substitute.
Sweet Potatoes: These sweet potatoes are ready in 15 minutes by air fryer or 25-30 minutes (at 425 degrees) in the oven. For an extra flavor kick, toss these around using some of the Tex-Mex Seasoning.
Tex-Mex Seasoning: A blend of chili powder, cumin, cayenne, paprika, garlic powder, salt, and pepper. Perfect for your sweet potatoes, ground beef, or both!
Corn Salsa: Not much different from your usual salsa (pico de gallo). Just with a corn-base. We used drained canned corn, but you can use freshly shaved corn on the cob or frozen corn (thawed).
Add Ins + Toppings: Because this is a burrito bowl, you can add in pretty much of your favorite burrito ingredients: Black Beans, Pickles (true Texas style), Jalapeños, Sour Cream, Avocados, Hot Sauce or Chipotle Mayo!
Tex-Mex Burrito Bowl
Ingredients
Main Bowl
- 12 oz Impossible Ground Beef
- 1 cup lettuce shredded
- 1 can black beans drained, rinsed
- 2 medium sweet potatoes peeled & diced
- ¼ cup pickles diced
- ¼ cup cheddar cheese shredded, for topping
Corn Salsa
- 1 cup corn kernels fresh, canned, or thawed from frozen
- ¼ cup red onion diced
- ¼ cup roma tomatoes diced
- ¼ cup fresh cilantro chopped
- Juice of 1 lime
- Salt to taste
Tex-Mex Seasoning
- 1 ½ tsp chili powder
- ¾ tsp cumin
- ¼ tsp smoked paprika
- ½ tsp cayenne powder
- ½ tsp garlic powder
- 1 tsp salt
- 1 tsp black pepper
Instructions
Sweet Potatoes
- Toss cubed sweet potatoes with a small portion of the Tex-Mex seasoning and 1 tbsp of avocado oil.
- Spread onto the air fryer basket in an even layer. Air Fry for 15 minutes on 375 degrees, flipping halfway, until golden and tender.
Vegan Beef
- In a large pan over medium heat, add 2 tbsp of avocado oil. Toss in diced onions and cook until lightly golden. Add in the Impossible Ground Beef and break it up with a spatula. Cook the beef until browned and cooked through.
- Add in the Tex-Mex seasoning. Mix to combine.
- Cook 1 more minute to let the flavors meld, then remove from heat.
Corn Salsa
- In a small bowl, combine the corn, tomatoes, red onion, cilantro, lime juice, and salt. Set aside.
Bowl Assemble
- Start with a layer of shredded lettuce. Add roasted sweet potatoes and black beans. Spoon on the Impossible ground beef. Add a scoop of corn salsa. Top with shredded cheese and sliced pickles.
- Top off with chipotle mayo, hot sauce, sour cream, or avocado for extra flair!
