So fruit and chocolate just never mixed well with me. Including chocolate covered strawberries, orange slices, or dates! But hear us out….if I had these Raspberry Chocolate Chip Cookies, I would definitely jump on the fruit-chocolate train. We’ve made the best fruit & chocolate dessert for you this week. These cookies aren’t just filled with dried raspberries, but they carry a sweet fruity taste throughout! Made with Zora’s Rose Flower chocolate bar, these are the highest quality of chocolate in cookies that you’ll enjoy!

Making the best chocolate chip cookies

Chocolate Chip cookies are all about the way you make the dough. Be careful not to over cream your butter & sugars. You can also use melted butter if you don’t have a hand mixer. After creaming (or mixing) your butter & sugar together, add in your egg and vanilla. Gently beat in the flour mixture until everything is combined and a thick dough forms. When your dough has formed, it’s best to fold in (using a spatula) the chocolate and dried raspberries. This ensures that you don’t over mix the batter & you have more control of the raspberries spreading & mixing evenly with the chocolate. Pop these in the oven for 9-11 minutes, and out comes the chewiest cookies you’ll ever take a bite of! Add in nuts, sprinkle powdered sugar, or fold in more free-dried fruit for the perfect crunch.

Chocolate: We used Zora’s Rose Flower Chocolate Bar. Described as “Infused with rose oil for a flora fruitiness interwoven with layers of vanilla for when you need those smooth, melt-in-the-mouth moments.

Freeze Dried Raspberries: Crush these dried raspberries up & toss them into your cookie dough!

Raspberry Chocolate Chip Cookies

This fruity chocolate combo is the best way to enjoy your cookies! These Raspberry Chocolate Chip Cookies have the sweetest raspberry flavors throughout and have the best chocolate bits throughout.

Cook Time 10 minutes
Total Time 2 hours 40 minutes

INGREDIENTS
 

  • 1 cup all purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup butter
  • 1 cup brown sugar
  • 1 egg
  • 1 Zora's Rose Flower Chocolate Bar chopped
  • ½ cup freeze dried raspberries chopped
  • 1 tsp vanilla extract

INSTRUCTIONS
 

  • In a large bowl beat the butter and sugar together for 1-2 minutes. Add in the egg & vanilla.
  • Add in the flour, baking soda, and salt until everything is combined.
  • Fold in the chocolate and dried raspberries.
  • Seal the dough & refrigerate it for 2-48 hours.
  • Preheat the oven to 350°F.
  • Roll cookie dough into 1-2 inch balls. Lay them out on a cookie sheet 2-3 inches apart. Press in small pieces of chocolate on top of the dough.
  • Bake the cookies for 9-11 minutes.
  • Let the cookies settle for 8-10 minutes & enjoy!
