Butter: Using softened butter is great, but what really makes this recipe easy (and one bowl without equipment) is the melted butter. Simply add this to your bowl, and mix with ease. A vegan, dairy free substitute is using vegetable or canola oil.
Eggs: The base structure of this cake is eggs! For a non dairy alternative, sub flax eggs, applesauce, or use Bob’s Red Mill Egg Replacer.

Blueberry Loaf Cake
- 2 cups all purpose flour
- 1½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ cup butter melted
- 1 cup white sugar
- 3 eggs
- ½ cup full fat greek yogurt
- 1½ cup blueberries coated in 1 tbsp flour
- 2 tsp vanilla
- ½ cup powdered sugar
- 3 tsp almond milk
- Preheat the oven to 350°F
- In a large bowl, mix butter, sugar, eggs, yogurt, and vanilla together.
- Add flour, baking powder, baking soda, and salt.
- Toss in your blueberries (coated in flour) & mix well.
- Pour the batter into a loaf pan, and bake for 55-60 minutes. (insert a knife into the middle of the loaf, if the knife comes out with batter on it, bake the loaf for about 5-10 minutes longer)
- Drizzle the glaze on top of a cooled loaf (the loaf should cool completely about 25-30 minutes outside of the pan).
