Egg Replacers
Bananas are known for being amazing egg replacers! In case you want an additional egg replacer there are vegan options like using xanthum gum, egg replacers, or flaxseed. Each have their own unique way of adding texture to your desserts. We used Bob’s Red Mill for our egg replacer & it did an amazing job in this banana bread!
Gluten Free Baking
Gluten free baking has it’s perks! There are so many flour substitutions that you can use for your desserts. Each flour will give you a slightly different unique taste! Lot’s of grocery stores are including gluten free flour on their shelves. Some great brands are King Arthur’s Baking, Bob’s Red Mill, and Good & Gather at Target. All of these flours are 1:1 which means you can easily substitute them using the exact measurement for flour in all of your recipes. Apart from gluten free flour, there is: almond flour, oat flour, and buckwheat flour that you can explore when looking for gluten free flours to try.
Vegan Baking
I think your first try at vegan baking should be anything oats or bananas! Bananas and oats both are healthy, easy to add to your desserts, and pair perfectly in your pastry batters. Vegan & Gluten Free Banana Oat Bread
INGREDIENTS
- 1¾ cup gluten free flour
- 1½ tsp baking powder
- ½ tsp baking soda
- ½ tsp cinnamon
- ½ tsp salt
- ½ cup vegetable oil
- ¾ cup brown sugar
- ¼ cup white sugar
- 2 tbsp Egg Replacer Bob's Red Mill*
- 3 bananas mashed
- 2 tsp vanilla extract
- 1 cup rolled oats
INSTRUCTIONS
- In a large bowl combine oil, sugar, egg replacer (according to package directions), bananas, & vanilla extract. Mix until well combined.
- Add in gf flour, baking powder, baking soda, cinnamon, and salt.
- Lastly add in oats.
- Bake on 350°F for 65-75 minutes or until an inserted toothpick comes out clean.
